Just wondering :)
I am not, but I am trying to eat more vegetable. It's not easy!

Olly: we only eat vegetarian meals at home & the ticket is getting the protein we need. Luna is the only carnivore here! Some of the things we eat include:

- oatmeal with baked banana & chocolate chips (not too many!)
- french toast made from low-carb bread with egg whites only and no-fat fruit yogurt on top
- protein bars made of whey and dried fruit
- salads with chick peas & feta and home made dressing
- apples with peanut butter
- whole wheat pasta with veggie marinara sauce & ground round (tofu made to look and taste like ground beef)

Here is a really good dressing to put on salads or for a baby carrot dip:
- 1/4 cup olive oil
- 1/4 cup balsamic vinegar
- tsp brown sugar
- lots of chopped garlic
- tsp dijon mustard

Roosje: I had an amazing spanakopita (= Greek for spinach pie) this morning from our bakery. (Not ours... I just go there all the time!) Greek cuisine is wonderful... For dinner we went to a taverna and had fish, fasolakia (= green beans ;) ) and mussels with vegetables and rice. And a liter of house white... :cool:

We love asparagus soup!
Ingredients:
1 1/2 large onions (sliced)
3 cloves garlic(minced)
1 tbsp. minced basil(fresh)
1 1/2 tsp. fresh oregano
3 lbs. asparagus (cut into 1 1/2 inch pieces)
1 lrg. leek (sliced)
8 cups veg. broth
1 1/2 tep. salt
1 tsp. white pepper(we like to add more than the recipe calls for, but thats up to you)
2 tbsp. butter
2 tbsp olive oil

In a large sauce pan, melt butter & olive oil over medium heat. Add onions, garlic, oregano, & basil until onions are transluscent(5-7mins). Add asparagus & leeks-cook 1 min. Add broth and salt and pepper, bring to a boil.
Reduce heat to low, partially cover pan and simmer until asparagus and leeks are very soft (about 45mins). In small amounts, use blender to desired consistancy.

Note: Before I put the soup in the blender, I separate some of the asparagus tips from the soup and I add them back to the soup after its all blended and ready to serve.

Roosje: I tried your Greek spinach pie tonight and it was very good appicon A little salty but I think that's from the feta cheese.

Borgan: I will try your oatmeal with baked banana. How long to you cook it in the oven?
